Ingredients:
- 250g chicken breast, diced
- 200g pasta penne or fusilli
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can 400g crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add diced chicken and cook until browned and cooked through, about 5-6 minutes
Remove chicken from skillet and set aside
In the same skillet, add chopped onion and minced garlic
Cook until softened and fragrant, about 2-3 minutes
Stir in crushed tomatoes, dried oregano, dried basil, dried thyme, salt, and pepper
Bring to a simmer and let it cook for about 10 minutes, stirring occasionally
Add the cooked chicken back to the skillet and let it simmer for an additional 2-3 minutes to heat through
Toss the cooked pasta with the tomato sauce until well coated
Serve hot with grated Parmesan cheese on top
