This Vegan Key Lime Pie offers a delightful twist on the classic dessert. Creamy, tangy lime filling atop a buttery graham cracker crust, its a refreshing treat perfect for any occasion.

Ingredients:

  • 1 1/2 cups raw cashews, soaked overnight
  • 1/2 cup coconut cream
  • 1/2 cup fresh lime juice
  • 1/4 cup maple syrup
  • Zest of 2 limes
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 1 1/2 cups graham cracker crumbs vegan-friendly
  • 1/4 cup melted vegan butter
  • 2 tablespoons maple syrup
  • Lime slices and zest, for garnish optional

Instructions:

In a food processor, blend soaked cashews, coconut cream, lime juice, maple syrup, lime zest, vanilla extract, and melted coconut oil until smooth and creamy

In a bowl, mix graham cracker crumbs, melted vegan butter, and maple syrup until well combined

Press the graham cracker mixture into the bottom of a pie dish to form the crust

Pour the lime filling over the crust and spread it evenly

Refrigerate the pie for at least 4 hours, or until set

Garnish with lime slices and zest before serving, if desired
