Ingredients:
- 1 1/2 cups raw cashews, soaked overnight
- 1/2 cup coconut cream
- 1/2 cup fresh lime juice
- 1/4 cup maple syrup
- Zest of 2 limes
- 1 teaspoon vanilla extract
- 1/4 cup coconut oil, melted
- 1 1/2 cups graham cracker crumbs vegan-friendly
- 1/4 cup melted vegan butter
- 2 tablespoons maple syrup
- Lime slices and zest, for garnish optional
Instructions:
In a food processor, blend soaked cashews, coconut cream, lime juice, maple syrup, lime zest, vanilla extract, and melted coconut oil until smooth and creamy
In a bowl, mix graham cracker crumbs, melted vegan butter, and maple syrup until well combined
