Ingredients:

  • 1 cup quinoa, cooked and cooled
  • 2 tablespoons chia seeds, toasted
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Toast the chia seeds for two to three minutes over medium-low heat in a dry skillet until they start to smell good

Take them off the heat and let them cool down

Toast the chia seeds and add them to a large bowl

Then add the crumbled feta cheese, cherry tomatoes, cucumber, red onion, and fresh parsley

Mix the lemon juice and olive oil in a small bowl with a whisk

Add pepper and salt to taste

Add the dressing to the quinoa mixture and mix it all together, making sure everything is covered

Put the salad in the fridge for at least 30 minutes before you serve it
