Ingredients:
- 4 chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- 2 tablespoons honey
- Fresh basil leaves, for garnish optional
Instructions:
In a small bowl, mix balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper
Place chicken breasts in a shallow dish or resealable plastic bag
Pour the balsamic marinade over the chicken, making sure its evenly coated
Marinate in the refrigerator for at least 30 minutes, or up to 4 hours
Preheat grill or grill pan to medium-high heat
Remove chicken from marinade and discard excess marinade
Grill chicken for 6-7 minutes per side, or until cooked through and no longer pink in the center, basting occasionally with chicken broth during grilling
While chicken is grilling, in a small saucepan, heat honey over medium heat until it starts to bubble
Remove from heat and stir in remaining chicken broth
Set aside
Once chicken is cooked, remove from grill and let it rest for a few minutes
Drizzle honey-broth mixture over the grilled chicken breasts
Garnish with fresh basil leaves, if desired, and serve hot
