These Sweet Potato & Black Bean Burgers are a delicious vegan alternative to traditional burgers. Packed with flavor and nutrients, they make a satisfying meal for vegans and non-vegans alike.
Ingredients:
- 2 cups mashed sweet potatoes
- 1 can 15 ounces black beans, rinsed and drained
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped cilantro
- 1/2 cup bread crumbs
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water as binder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Burger buns and toppings of choice lettuce, tomato, avocado, etc
Instructions:
Preheat oven to 375F 190C
In a large mixing bowl, combine mashed sweet potatoes, black beans, red onion, cilantro, bread crumbs, flaxseed mixture, cumin, chili powder, salt, and pepper
Mix until well combined
Form mixture into burger patties of desired size
Place patties on a parchment-lined baking sheet
Bake in the preheated oven for 25-30 minutes, flipping halfway through, until burgers are firm and lightly browned
Serve on burger buns with your favorite toppings
