Ingredients:
- 1 lb ground buffalo meat
- 2 medium sweet potatoes, grated
- 1/2 cup almond flour
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and black pepper to taste
- 1/4 cup olive oil
- 1/2 cup shredded cabbage
- 1/4 cup blue cheese crumbles
- 2 tbsp paleo mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp honey optional
- Lettuce leaves for serving
Instructions:
In a large mixing bowl, combine the ground buffalo meat, grated sweet potatoes, almond flour, green onions, minced garlic, smoked paprika, cayenne pepper, salt, and black pepper
Mix well until all ingredients are evenly incorporated
Form the mixture into burger patties of your desired size
Heat olive oil in a skillet over medium-high heat
Once hot, add the burger patties and cook for about 4-5 minutes per side or until they reach your preferred level of doneness
While the burgers are cooking, prepare the blue cheese slaw
In a separate bowl, combine the shredded cabbage, blue cheese crumbles, paleo mayonnaise, apple cider vinegar, and honey if using
Mix until the slaw is well coated with the dressing
Serve the buffalo sweet potato burgers on lettuce leaves and top with a generous portion of the blue cheese slaw
