Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 lb small red potatoes, halved
- 2 ears of corn, cut into thirds
- 1 onion, quartered
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley, chopped for garnish
Instructions:
Preheat the air fryer to 400F 200C
In a large bowl, toss shrimp, potatoes, corn, onion, garlic, Cajun seasoning, olive oil, salt, and pepper until evenly coated
Place the seasoned ingredients into the air fryer basket
Cook for 12-15 minutes, shaking the basket halfway through, until the shrimp is pink and cooked through, and the potatoes are fork-tender
